Combo 1:Fine. No problems at all
Combo 2:I personally wouldn't because if the peacock suddenly shows its tail the smaller birds could be come stressed out and injure themselves in consequence

I doubt that a peacock showing its tail will cause stress to small birds.

Could a pair of Servals and an aardvark be kept together?

Also could giant anteaters, Darwin rhea and Patagonian Mara be kept together?

Can orcas be kept with beluga whales? or any other cetacean
If you used fish eating orcas, yes, but it would need an extremeley MASSIVE tank and the animals would require so much care that it's almost impossible for any real zoo or aquarium.
And then there is Lolita,

https://en.wikipedia.org/wiki/Lolita_(orca)

Not only is she kept in an appallingly small "bowl" of a tank, but she also shares this space with a pair of Pacific White Sided dolphins.

Platypus and shelduck (Australian or rajah)? Thoughts?

I wouldn't. Platypus are stressed very easily and are notoriously hard to keep in captivity, I'd keep em alone

That exactly^

Also, unless you have the perfect outdoor climate for them (aka only on the outer edges of Australia) with the perfect habitat for them, including land they can dig burrows in etc., it's easiest to keep them in a 'terrarium' indoors, making them even less combineable.

So what do you guys think of this combination idea;
I'd like to have a rotation exhibit, for a few days I'll have Patagonian Maras on exhibit, and then the other days I'll have Giant Anteaters and Southern Screamers on exhibit.
I was thinking of having the Maras and Screamers actually be together, but I don't know if they'd get along.

All 3 of those would work together, as long as the maras and screamers have somewhere to retreat.

A weird random guy.

Would Spectacled Bears and Giant Anteaters work?

As long as you have relatively passive individuals... Maybe. I'd say so, but be sure to provide enough side exhibits so individual animals can be set apart.

Spurred tortoises and guineafowl should work fine, pretty much any non-aggressive gamefowl should work.

In petting zoo setups, wallabies, sheep, goats, rabbits, guinea pigs, and mara all work.

Geographic-wise, guineafowl (mentioned earlier), hyrax, klipspringer and any other small, non-aggressive animal (preferably with similar care requirements) works.

Thanks Fluffs

Do you think maybe Turkeys would be Ok? Thinking either the Eastern or Australian?

It's just the fill the Exhibit up abit.

I wouldn't think so. Tortoises are slow and docile while turkeys have been known to, especially in close proximity with other animals, be aggressive or territorial.
