I was thinking of,
Giraffe (Recticulated or Masai), Speke's Gazelle, and Greater Kudu
I'm gonna use that combo at my zoo :)

Young humans go very well with them and make a nice form of live prey and enrichment for the parasites.

Nah, with all the horrible people plagueing the world nowadays you can never trust anyone to host your ticks. You have better house them yourself.

Domestic animals, such as Canis Lupus Familiaris, Felis Catus, and Equus caballus, are good victi....I mean exhibitmates. Lots of ground cover, such as leaves or tall grass, is nice for the ticks.

What could I hypothetically put in a Leedsicthys tank that's big enough not to be eaten, but small enough not to prey on the babies?

Thje main issue I see with that combo is that softshells spend most of the time just lying on the floor (if not under it) so you'd hardly see them unless you have an underwater view.

Grizzly bear and red foxes in one exhibit with an area the foxes can go to get away from bears. Is this a workable combination

Risky one, but could work. It has been done before with other species (although not as large as brown bears IIRC).

This should work. I know a zoo which holds "Brolar bears" (Polar/brown bear hybrids) together with silver foxes. Another zoo holds Syrian brown bears and corsac foxes together.
So, I'm saying that grizzly bears and red foxes work as long as the foxes have places to hide.
