Golden Eagle.
I don't think these one are endangered, they're quite common in the Alps.

Some West Indian manatees, although I had a chance to see some sea turtles, I couldn't stand the cold water.

I live in NA, specifically California.

Goldies aren't very common.

I saw a bald eagle just a few hundred feet from my house once, perched in a tree. Not uncommon elsewhere, but unheard of to see in suburban northern Indiana.

I also saw a piebald wild turkey in Tennessee and an albino canada goose at the pond by my house (or maybe an all-white domestic x canada cross, but usually they look mostly like canada geese and can't fly - this one could). Not sure how rare either of those color morphs are, though.

I think the "rarest" animal I've seen is a flamingo , saw 3 flying above me when I was at primary school :3

Not exactly rare but not commonly seen are River Otters, and I've seen several of them.

Also I have seen quite a few Sandhill Cranes.

i saw flamingoes too. one was in a lake not too far from where i live, don't know what was it doing there since it was a hunting lake ... and i saw a flock of them flying above us in Sardinia

I've seen a Black Bear, which isn't very common here in the Willamette Valley. I've also seen Leatherback Sea Turtles on the beach; there were three of them. They rarely come up to Oregon except to forage, so seeing them resting was quite a unique experience for someone in Oregon.

i also saw common dolphins and whales outside Livorno's harbour. not sure about the species, i think they were fin whales

I see sandhill cranes very often - I saw them earlier this morning migrating overhead, on their way up to Canada to breed. They stop off to rest not far from me in their huge flocks in the fall and are quite a sight to see - usually four or five thousand at once.

I also have seen 1 or 2 sandhill cranes in the wild. They are very rare here.
