Source? I've never heard of any of these being planned EVER being the case. All I know that is even similar to this is that in one of the extinct animal trailers, it was, by many members of the community, believed there was an Edmontosaurus in the background, though it turned out not to be the case.
BF had an Edmontosaurus and Brachiosaurus lined up for the roster however due to company disputes and the need to only have 4 animals in Dino Danger the edmontosaurus was scrapped and brachiosaurus was made into the slide we all know of. As for argentinosaurus Ive only heard of it by one other member from an old forum (I think it was on Tesara?) anyway supposedly it was in thought of being made, but was scrapped early on for being to big. Hence why there were no sauropods the devs thought any popular ones at the time would've been to big to keep realistically in their restricted exhibit building selections.

Saying "yah they were going to" isn't a source. If you're going to make claims, could you please back it up at least?

All in all it seems like the biomes of the animals in EA were mostly just the randomized whims of the developers rather than derived from any logic or knowledge of the paleoenvironmental record.
Well, not quite. All those animals in Boreal Forest are there because the developers mistook "Boreal" for "Coniferous", and wetlands because so many fossils are found at the bottom of lakes and rivers. But yes, for many animals it doesn't make much sense.

I think Edmontosaurus is at least true (I've heard it from several individual sources, including Wikipedia) though I never heard anything about Argentinosaurus or Brachiosaurus.

All I've found of a scrapped Edmontosaurus was that the Zoo Tycoon wiki had it listed as scrapped, and considering how bad the Zoo Tycoon wiki is, I really doubt that it's the case.

Come to think of it I don't remember whether the Wikipedia mention of it had a citation or not, so it could be bogus.

To be fair most of the wetland species can legitimately be constructed as having lived in wetland or at least lacustrine environments.

But yes, there's no logical reason for T. rex to lived in the jungle while the completely contemporary Triceratops is now in the taiga.

Speaking of which I think Apatosaurus and Allosaurus should've been savannah animals in ZT1 (or at the very least coniferous forest). I mean WTF, deciduous forest for Apatosaurus? THERE WERE NO DECIDUOUS FORESTS IN THE MOTHERF**KING JURASSIC!!!!!

Even worse with Plateosaurus, which if memmory serves me right was also from the decidious forest biome and it's from the late Triasic.
